The Regulatory Reform (Fire Safety) Order 2005 requires the responsible person to assess and reduce fire risk. A greasy canopy and duct is a hazard the assessment should cover. Insurers may refuse a claim if a fire is traced to a poorly maintained system. Your food hygiene rating is set separately, through the scheme the Food Standards Agency runs with local councils. In England you are encouraged, but not legally required, to display it.

What a full clean covers

Even a small café extract has the same parts. The provider cleans the canopy and filters and the full ductwork run to the discharge, with access panels fitted where needed. The extract fan is cleaned too. Grease-depth readings are taken before and after, and TR19 Grease treats a mean of 200 microns as the limit between cleans. You receive a certificate with before-and-after photographs. BESA also advises cleaning canopy filters daily or as the manufacturer instructs, which your staff can do between professional cleans.

Fitting the clean around opening hours

If you close by late afternoon, an evening clean is straightforward and costs no trading time. If you trade from a listed building or a shopping arcade, tell us when you enquire so the provider can plan access to the roof or rear yard. Can kitchen staff clean the filters between professional cleans?

Do we have to display our food hygiene sticker?
