Which TR19 frequency band restaurants fall into

TR19 Grease is the BESA specification for kitchen extract, and it sets minimum intervals by daily cooking hours. Heavy use of 12 to 16 hours a day means cleaning every three months. Moderate use of 6 to 12 hours means every six months, and light use of 2 to 6 hours means every twelve months. A restaurant serving lunch and dinner is usually in the six-monthly band. A kitchen open from breakfast until late is in the quarterly band, and charcoal or open-flame cooking can justify a shorter interval than hours alone suggest. Insurance and your fire risk assessment

The Regulatory Reform (Fire Safety) Order 2005 requires the responsible person to assess and reduce fire risk in non-domestic premises. Grease in the ductwork is a hazard your fire risk assessment should name. BESA warns that insurers may refuse a claim when a fire is traced back to poor maintenance. West Yorkshire Fire and Rescue Service cites figures showing that 70% of fires in pubs, restaurants and takeaways are caused by dirt and grease building up inside extractor or ventilation fan systems.

In March 2014 firefighters were called to a restaurant on Albert Street, Harrogate, after a fire started in the kitchen extraction ducting. The fire spread through the ducting to other floors of the building, and around 18 fire vehicles attended at its peak.

What a full clean covers

A TR19 clean covers far more than the filters. The provider cleans the canopy and filters and the full ductwork run from canopy to discharge. Access panels are fitted where a section cannot otherwise be reached, and the extract fan is cleaned too. Grease-depth readings (wet film thickness tests) are taken before and after. TR19 Grease uses a mean of 200 microns as the limit between cleans. You receive a certificate with before-and-after photographs taken from matching positions.

Scheduling around service
